How clean are restaurants?

Food preparation requires the manipulation of organic material and this can lead to spread across the entire area. The most important areas where members of the dirty dozen can be found are sinks, waste containers, counters, and cutting boards. Each of these require significant cleaning on a regular basis to reduce the levels of organic load.

In the dining area, the most important factor in organic material spread are the patrons. Their presence may be limited but they end up touching various items including the tables, chairs, trays, and menus. Organic material ends up on these surfaces and can lead to survival and growth of germs, including many of the dirty dozen.

The most likely cause of restaurant illness is the food but many of the dirty dozen can be found on a variety of surfaces. They include:
